Festivities in the Hinterland

We spent the afternoon with Goji & The Bees and The Grassy Bowl at the most beautiful setting in the Byron Hinterland for some Festive Fun. The girls treated us to two delicious salads to share with you to recreate yourself this Christmas. You will find these special recipes below. Tash and Liv are both constantly inspired to live a healthy lifestyle which shows in their day to day life. Liv is behind The Grassy Bowl Kombucha Kombi and is usually parked up at Byron beaches in the mornings serving delicious smoothie bowls and kombucha. Tash is behind Goji and the Bees and is always using the freshest ingredients to treat her friends and family to delicious spreads to enjoy poolside at their beautiful Hinterland property.
Naturally with this kind of thing being so second nature to the girls, the shoot was purely a reflection of two good friends, making good food and having a good time, in our favourite Arnhem Summer Styles . We’ll let the photos do the talking…
Recipes Below...
“Juicy Mango Salad” 
 Ingredients: 
4 large handfuls of leafy greens 
1 avocado 
1 mango 
2 handfuls of sunflower sprouts  
1 small bunch of fennel  
Sauerkraut of choice 
Kale sprouts  
Garlic flowers (optional but so tasty!)  
Black sesame seeds  
 Method:  
Place leafy greens on platter. Cut into mango & avocado into slices and place around the edge of the platter. Chop the fennel and mix with the sunflower sprouts, then add to the centre of the platter. Place spoonfuls of sauerkraut around the sunflower sprouts. Add kale sprouts and garlic flowers. Sprinkle black sesame seeds over avocado.  
 Juicy Mango Salad Dressing 
Ingredients:  
1 garlic clove, peeled & chopped   
Juice of 2 lemons 
1 TBS Organic Dijon Mustard 
1 TBS White Miso 
 1 TBS Coconut Oil Olive Oil 
 Method:  
Place all ingredients except olive oil into a bowl and mix until it becomes a paste. Add Olive Oil to soften the mix as desired. Add Salt & Pepper to taste and mix again.  
“Ugly Tomato Salad” 
 Ingredients:  
4 large handfuls of leafy greens  
1 handful of kale sprouts  
2 large 'ugly tomatoes' 
1 block of ashy goats cheese  
1/4 of a purple cabbage  
 Method:  
Place leafy greens on a platter. Finley chop and add the cabbage. Cut tomatoes into chunks and add to the platter. 
Break apart the goats cheese and add. 
Sprinkle the sprouts over the top. 
 Ugly Tomato Salad Dressing: Strawberry Dressing 
 Ingredients:  
2 TBS each of Salt & Pepper 
1 garlic clove, peeled & chopped   
1 punnet of strawberries (keep greens on)  
1 TBS honey 
1 TBS mustard 
4 TBS balsamic vinegar  
1/2 cup of olive oil 
Juice from 2 lemons  
 Method:  Place all ingredients except the olive oil in the blender and blend until smooth. Add the olive oil and blend again.
